PizzaExpress has submitted a planning application to Hertsmere council for a new premises licence at South Mimms Welcome Break services.

It’s slated to take the place of Ed’s Easy Diner, which closed its doors for good last week.

Potters Bar resident Luiza Terlecka, who works at the nearby Ramada Hotel, welcomed the possibility.

“My kids are happy,” she said. “I’m looking forward to it. Everyone likes pizza!”

A spokesperson for PizzaExpress said: “This new restaurant represents a key part of the company’s expansion, and we will continue to deliver exactly what our customers expect and love, whilst making our delicious pizza even more accessible for all.

“We will be issuing more details nearer the time.”

The pizza and pasta chain has over 470 restaurants in the UK, but only started opening branches on motorway services in 2017, as part of a partnership with Welcome Break.
